Being the lazy baker that I am, I like simple and easy recipes without a lot of steps or the need to take out your electric mixer. Well, readers, this one is a two-step process with boiling the ingredients to basically plump out the raisins to sifting the dry ingredients before combining wet ingredients with the dry. You can use a large spoon or a fork just to mix everything together, which how I make this. What more could you want?
To make healthy spice cake muffins, I avoided shortening, margarine and butter and opted for canola oil instead. The taste is not compromised in the least. But eliminating artery-clogging saturated fat in butter and margarine that has a combination of saturated and trans fats, liquid oils like canola, olive or safflower oils are better choicesfor baking and cooking.

Best Raisin Spice Muffins
1 cup of sugar
2/3 cup of raisins
½ cups of canola oil
1 cup of water
½ teaspoons of ground cloves
1 teaspoon of cinnamon
1/4 teaspoon of allspice
2 cups of flour
1 teaspoon of baking powder, leveled
1 teaspoon of baking soda, leveled
1 large egg
Place in a saucepan the raisins, sugar, oil, water, and spices. Bring this to a boil for one minute, then let these ingredients cool.
In a large mixing bowl, sift together the flour, baking soda, and baking powder.
After the ingredients are cool, then add the egg and mix through.
Now slowly add the wet ingredients to the dry ones, alternating as you go until all the ingredients are combined.
Pour into your lined or well-greased muffin pan and fill two-thirds full.
Bake in a 375-degree oven for about 15-20 minutes, depending on how your oven is regulated. Test with a toothpick, slender knife or cake tester to see if anything sticks.
This recipe makes 12 muffins.
