Banana Cornbread Recipe With Molasses – The Finest Solution to Use Ripe Bananas


Banana cornbread may be something that you never tried yet, but I assure you that it is moist and a deliciously different recipe with just a little molasses and vanilla that compliment banana flavor. My recipe is also a great way to use those overly ripe bananas, which is always wonderful if you can’t eat them in time to avoid waste.

Reasons Why You Need to Taste This Fruity Cornbread

This cornbread is subtly sweet with a nice fruity element from the ripe bananas that also makes it extra moist and tender.

This recipe also is so easy to make. You don’t have creaming shortening or butter. Instead, I only use canola oil. In fact, you don’t need to bother pulling out your electric mixer. You can just use a fork to incorporate the ingredients before pouring into your well-greased pan that is approximately a 9-x 13″ baking pan or an 8″ square pan also will work. The most labor intensive part of baking this quick bread is mashing those ripe bananas with a fork.

This banana molasses cornbread also stays moist the next day, which is another reason you’ll love this thrifty recipe.

If you want to avoid using an egg and opt for a vegan banana cornbread, you can simply use a flax egg, which is a vegan egg substitute made from ground flax seeds and water. To make a flax egg, you just need to mix one tablespoon of ground flax seeds with three tablespoons of water, and let it sit for about 15 minutes until it becomes gel-like. Then, you can use it in your recipe as you would use a regular egg.

Banana Cornbread With Molasses

1-1/4 cups of sifted flour
½ cups of cornmeal
1 tablespoon of baking powder, leveled
1 large egg
1/4 cups of sugar
2 tablespoons of molasses (dark, light or black strap)
1/3 cup of canola oil
2 ripe medium bananas, mashed
2 teaspoons of vanilla
1 cup of milk

Mash the ripe bananas with a fork or a potato masher.

Now mix together the egg, oil, sugar, molasses, vanilla, sifted flour, cornmeal, baking powder, vanilla to your mixing bowl with the mashed bananas. I just a fork to mix until all the ingredients are well combined.

Pour into a well-greased pan that is approximately 9 x 13″ baking pan or an 8″ square pan.

Bake in a 400-degree oven for about 20 minutes, depending on how your oven is regulated. Test with a toothpick, cake tester or slender knife to see if anything sticks determining if it is thoroughly baked.
