This orange chicken is easy to cook with just a few steps. Of course, you need to zest an orange, chop the onion, garlic and carrots, but other than that there is hardly much effort required. You do fry the chicken slightly before stirring in the vegetables to partially cook before making and thickening the sauce and transferring to your oven to bake.

To keep this a healthy chicken recipe with peanuts, I take the skin off to avoid that excess fat that is full of calories and cholesterol. Instead of salted peanuts, I buy the unsalted variety over those cocktail peanuts that are heavy on the sodium. Furthermore, I use the low-sodium soy sauce for additional reduction of that unneeded salt in this poultry recipe.

If you want the carrots to cook more evenly and faster, I also recommend slicing them as thin as possible and slicing diagonally. Slicing them in a different manner such as straight across and with more thickness will make the dish take longer to cook.

Equally important, this orange honey sauce is very good poured over the chicken with a side of cooked rice or mashed potatoes and fresh green beans.

Regardless, you always have an option to use chicken breasts if you don’t care for thighs. You can keep the breasts on the bone or slice boneless chicken pieces, which you can later add to the sauce and pour over the cooked rice or mashed potatoes. Mashed potatoes with a honey, soy and orange sauce may sound unappealing to some people, but it is also delicious that way.

Healthy Orange Chicken Recipe with Soy Sauce and Ginger in Skillet

Healthy Orange Chicken Recipe with Soy Sauce and Ginger

1 lb. of skinless chicken thighs (4 small or 3 large)
3/4 cup of orange juice
1 small onion, finely chopped (about 1/3 cup)
orange zest from one orange
1 tablespoon of cornstarch
1 tablespoon of low-sodium soy sauce
3 tablespoons of extra virgin olive oil
1/3 cup of honey
2 cloves of garlic, finely minced
2 large carrots, sliced thin and diagonally cut
1/4 teaspoon of ginger

Preheat your oven to 400-degrees.

Brown the chicken thighs in the olive oil in a skillet first to take the raw pink color out.

After cooking the chicken slightly, add the onion, garlic and thinly sliced carrots and continue frying in that skillet until the vegetables are golden brown.

Now stir in the orange juice that you mixed with the cornstarch, soy sauce, orange zest, honey, and ginger and cook until the sauce somewhat thickens.

Stir in the peanuts into the skillet and mix through.

Remove from the stove top and cover before transferring to the oven.

Bake at 400-degrees for about 45-50 minutes, depending on how your oven is regulated until the chicken is tender.
