Easy methods to Make Crusty Dinner Rolls With Egg Glaze


Nothing smells better than homemade bread or rolls baking in the oven like these crusty dinner rolls that are fluffy inside and chewy on the outside. Better yet are all the smiles of appreciation that you’ll see once you present them with their shiny egg wash glaze as that aroma wafts toward your family or friends that are lucky enough to taste them warm from the oven.

Why This Chewy Dinner Rolls Recipe Has Merit

These crusty dinner rolls are also quite easy to make, which is always important instead of bogging you down with countless steps, lots of expensive or too many ingredients. In fact, you can have these delicious hard rolls ready in about three hours.

In addition, you can shape these light rolls fairly large or smaller. I usually get about 24 to 29 rolls out of this recipe.

Tips and Tricks for Perfect Hard Rolls

Furthermore, adding an egg glaze along with one tablespoon of water contributes a shiny gloss to the rolls. However, there is a difference when using the yolks or the whites. If you brush on just the egg whites, then the rolls take on a lighter color as well as shine compared to a darker golden color when only using egg yolks. But if you don’t feel like separating the white from the yolk, you can always brush on the entire egg once mixing it with a fork. The color will be light gold and glossy. Something else to note is to make sure the egg is at room temperature before brushing it on the dough with the water helps for better results.

If you like crustier rolls, then place a shallow pan with about a cup of hot water in the bottom rack of your oven as it preheats. The steam will rise to cause the crust to expand resulting in that harder outer crust. Remove the pan after about ten minutes of baking time.

Always proof your yeast to see if it is still active. I like to do that as the first step by adding my dry yeast to the water along with one tablespoon of the sugar in the recipe. Afterwards, wait a few minutes to see if the water starts foaming, which is a sign that the yeast is still working.

Crusty Dinner Rolls Recipe

6 to 6 ½ cups of sifted flour
2 tablespoons of sugar
2 teaspoons of salt
2 packages of active dry yeast or 5 ½ teaspoons
1/4 cup of canola oil
2 large eggs
2 cups very warm (not hot) water
1 egg (for the egg glaze) optional
1 tablespoon of water

In a large mixing bowl, place the very warm water, a tablespoon of the sugar and yeast and mix to start proofing the yeast. Give it a few minutes and if the water becomes foamy, then the yeast is ready to use.

Now add about three cups of the flour, the remaining tablespoon of sugar, salt, oil, and two eggs. Use a whisk or your electric mixer to beat until smooth.

Next, you will be adding two more cups of flour and working it in with your wooden spoon or by hand, slowly adding more of the remaining flour until forming soft, pliable dough.

Remove from your mixing bowl and place on a floured surface to knead for several minutes until smooth and elastic.

Cover and let rise in a warm spot until doubled in size, which is usually about 1 ½ hours.

After the dough rises, shape the dough into about 24 or 29 rolls and place on well-greased pans.

Allow the shaped rolls to grow for about another hour.

Then prepare the egg wash with either just a yolk and a tablespoon of water or just the white and that water or the whole egg and the water.

Now take a sharp knife and make a slash or an X design across the tops.

Use a teflon brush to gently paint tops of the rolls. Don’t press too hard or the rolls could deflate.

Bake in a 400-degree oven for about 15-20 minutes, depending on how your oven is regulated.

The light rolls should be a golden color when baked.
