Make Chewy Oatmeal Cookies With Lemon and Molasses


Refrigerator cookies are always a nice and convenient way to have fresh cookies on hand when unexpected company arrives or just when the family wants something sweet in a hurry. This recipe for oatmeal refrigerator cookies has a great texture being crispy outside and chewy inside as well as deliciously accented with lemon and molasses that makes these cookies stand out.

This is an easy cookie recipe that also can be made with canola oil instead of butter for a healthy version for those needing to watch their cholesterol. In addition, you don’t need salt to make these cookies tasty or improve how they bake. Less salt in your daily life is not just for those that need to limit their sodium intake, but for everyone in general because it is important for good health with all the hidden sources in our foods that it comes in.

Chewy Lemon Molasses Oatmeal Refrigerator Cookies

½ cups butter or canola oil
½ cups brown sugar, firmly packed (light or dark)
½ cups of sugar
1 large egg
1 ½ teaspoons of grated lemon rind or lemon extract
1 ½ teaspoons of molasses (dark, light or blackstrap)
½ teaspoons of vanilla
1 cup of flour
½ teaspoons of baking soda, leveled
1 ½ cups of quick oats

In a large mixing bowl, cream the softened butter, eggs, sugar, lemon rind, molasses, and vanilla thoroughly in a mixing bowl with your electric mixer.

Sift together the flour, baking soda and stir into the wet ingredients.

Then add the oats and mix thoroughly with a large wooden spoon or your hands.

Press and mold into a long smooth roll. This roll should be approximately two and one-half inches around. Wrap in wax paper and chill for several hours. You can also store these cookies in the freezer.

When ready to bake, cut into fairly thick slices about 1/8-inch thick.

Place on well-greased cookie sheets.

Bake in a 400-degree oven for about eight to 10 minutes or until lightly browned. The baking time depends on how your oven is regulated and the thickness of the cookies that you slice.
