1-1/3 cup of sugar
½ teaspoons of lemon extract
1 teaspoon of vanilla
3 cups of sifted flour
½ cups of quick oats
3 medium overripe bananas, mashed

1 tablespoon of baking powder, leveled
1 teaspoon of baking soda, leveled
4 large eggs
2/3 cup of milk + 1 tablespoon of lemon juice
- Grease a 9-inch tube pan. In a large mixing bowl, beat the sugar, oil, mashed banana, grated carrots, vanilla, lemon extract, and the eggs in a large mixing bowl thoroughly until well combined.
- Mix together the milk with the lemon juice to sour it in your measuring cup. Then add the baking soda and stir through.
- Now add the sifted flour, baking powder and oats gradually to the sugar and oil mixture and beat until well-mixed alternating with the soured milk.
