Should Make Chocolate Chip Almond Butter Bars

There is something about baking that relaxes me and makes me happy. As I measure the ingredients and mix everything together, I get that familiar feeling of comfort that seems to surface every time I lick beaters full of oatmeal cookie dough or bite into a warm brownie fresh out of the oven.

A few weeks ago, when we invited our neighbors over for a casual weeknight cookout, I wanted to whip up a fast dessert that would be easy to grab as we chatted away and figured welcoming guests into our home was the perfect excuse to bake up a sweet treat! I shared a few pictures of the baking process when I first made these bars on Instagram Stories, and a bunch of you requested the recipe, so I made sure to make the bars again and measure everything out so I could share the full recipe for these almond butter chocolate chip cookie bars with you today on the blog. (And, let’s be honest, it was a great excuse to make these bars again for our little family to enjoy!)

For the lazy bakers out there (ahem, me), I have good news for you. This is a one-bowl recipe so effort is minimal, dishes are minimal and any baking mistakes are sure to be minimal with this easy peasy bars recipe.

Ingredients

So what do you need to make these chocolate chip almond butter bars? Here’s the rundown:

  • Almond butter: But you already figured that, didn’t you, you smartie pants? And yes, you may swap peanut butter for the almond butter if that’s more your thing.
  • Coconut oil: I love using this brand because it’s already melted for you.
  • Vanilla extract: To quote my middle child, “It makes everything taste better but don’t eat it by itself or you’ll be sorry.”
  • Brown sugar + Honey: For that deliciously caramely sweetness
  • Egg: Just one
  • Flour + Oats: To keep it all together! And I’m sorry I don’t have an oat flour or gluten-free option for these bars but if you do a little experimenting and they turn out well, please let me know!
  • Baking soda + Sea salt: Just your average baking essentials
  • Chocolate chips: Milk chocolate, semi sweet or dark chocolate chips, it’s up to you! I do recommend using mini chocolate chips in this recipe because they melt into the bars and make them extra chocolaty and almost brownie-like. These bars taste like a perfect hybrid between a chocolate chip cookie and an almond butter blondie. Heck yesssss.

Instructions

Remember that one-bowl recipe I promised you? I wouldn’t lead you astray! Here’s how you make these simple and simply delicious chocolate chip almond butter bars:

Step 1

Preheat oven to 350 degrees. Mix almond butter, brown sugar, vanilla, honey, melted coconut oil and egg together in a large bowl until combined. Slowly mix in the flour, oats, baking soda and salt.

Once batter is fully combined, stir in mini chocolate chips and spread batter into an 8×8 baking dish sprayed with cooking spray.

Step 3

Bake for approximately 20-25 minutes or until top is lightly browned. Allow bars to cool and then transfer to the refrigerator for about 30 minutes or so before serving to allow the bars to cool completely and set further.

  • 1/2 cup creamy almond butter
  • 3 tablespoons melted coconut oil
  • 3/4 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1 egg
  • 3/4 cup all-purpose flour
  • 3/4 cup old fashioned rolled oats
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips


Instructions
