Simple Grated Apple Cake Recipe: Good for Autumn Baking

This grated apple sheet cake is a unique twist on a classic dessert. Made with vanilla, lemon juice, canola oil, and walnuts, it’s a light and refreshing indulgence. Unlike traditional apple cakes, this one doesn’t use any spices, giving it a more subtle and delicate flavor. Grated Apple Cake

Ingredients:

1 cup canola oil
2 cups sugar
4 large eggs
3 tablespoons lemon juice
1/2 teaspoon salt
2 teaspoons baking powder (leveled)
2 teaspoons baking soda (leveled)
2 cups grated peeled apples
1 cup chopped walnuts
2 teaspoons vanilla extract
4 cups sifted flour
your favorite creamy white frosting (optional)

Instructions:

  1. Beat the oil, vanilla, and lemon juice with eggs, one at a time, in your mixing bowl.
  2. Sift together all the dry ingredients (sugar, salt, baking powder, baking soda, and flour). Add and blend alternately with the grated apples to the egg mixture.
  3. Add the chopped walnuts last to incorporate.
  4. Pour the batter into a well-greased 9×13 inch pan.
  5. Bake at 350 degree oven for 40 minutes. Test with a cake tester, toothpick or slender knife to see if anything sticks for determining doneness.
  6. Allow to cool in the pan before frosting. It is also wonderful plain as a snack cake.
