My Cottage Cheese and Noodles Recipe Is Straightforward and a Good Foremost Dish for Lent


My cottage cheese and noodles recipe is easy and a delicious meatless main dish that I make quite often that has only a few ingredients. Imagine frying lots of chopped onion in olive oil and a few tablespoons of butter or margarine until golden brown before stirring in the salt and pepper for the sauce then adding the cottage cheese and finally stirring in the noodles or your favorite form of pasta. This recipe may sound too simple with only those ingredients, but it is bursting with flavor with that marriage of sweetened fried onions joined with oil, butter and cottage cheese in a way that is hard to describe.

Though you can use a low-fat cottage cheese, I always use a large curd 4% milk fat cottage cheese for that bit of extra creaminess it contributes to this dish. Sometimes, I also use wide noodles, but shells, rotini or elbow macaroni seems each to give this recipe a slightly different taste.

Another great thing about my cottage cheese and noodles recipe is that you can also add cooked sauerkraut, caraway seed, a bit of sugar to sweeten and curb some of the sourness from the sauerkraut along with some black pepper to change this recipe up. The sauerkraut is wonderful to get that extra health benefit of fermentation into your diet.

Cottage Cheese and Noodles Recipe

1- ½ cups creamy cottage cheese
2 tablespoons of butter or margarine
1/3 cup of olive oil
3/4 teaspoon salt + 1 teaspoon of salt for the water to cook the pasta
½ teaspoons black pepper
1 large onion, finely chopped
1 pound of noodles or your favorite form of pasta

Add the finely cut onions to fry in the oil and butter in a pot on your stove until golden brown.

On another burner, I put the water for the noodles on to boil. Add a teaspoon of salt to this water first because it does help speed up the cooking by increasing the water’s temperature. In addition, it also helps flavor. Finally, I like to reserve some of the pasta water after the noodles are cooked so they better adhere to the sauce as well as later to moisten up the dish if needed.

Once the onions are golden brown, I stir in the salt and pepper and combine well.

Finally, I stir in the cooked noodles and follow with the cottage cheese, mixing well as I go.
