These cookies are not only scrumptious with a cup of coffee or a glass of milk, they also don’t take long to create, bake and eat!
You probably are thinking that I’m exaggerating of how easy these cookies can be. However, I assure you that this recipe is one of the simplest ones you’ll ever stumble upon. First of all, I use just canola oil instead of creaming butter or shortening before adding the egg, sugar, cinnamon, and vanilla to combine thoroughly beating with my electric mixer.
Sifting the flour, salt and baking powder together in another mixing bowl follows before adding the dry ingredients to the moistened ones. Afterwards, you can stir together the ingredients with a wooden spoon or your hand. Usually I don’t use my hand, but this dough is easier to work with than stickier dough.
All that is left to do is grease your cookie sheets and shape into small balls. Place them about two inches apart to expand a bit before sending them to your oven.

Easy and Scrumptious Cinnamon Cookies Recipe
1-1/4 cup of flour
1 teaspoon of baking powder, leveled
1/4 teaspoon of salt
½ cup of canola oil
1 cup of sugar
1 large egg
1 teaspoon of vanilla
2 teaspoons of cinnamon
Sift together in a large mixing bowl the flour, baking powder and salt.
In another mixing bowl, pour in the oil, egg, sugar, and cinnamon and beat with your electric mixer until creamy.
Next, stir in the flour mixture to the moistened ingredients to combine and mix throughly with a wooden spoon or with your hand.
Shape the dough into small balls and place about two inches apart on greased cookie sheets.
Bake in a 350-degree oven for about 12-15 minutes, depending on how your oven is regulated.
These cookies will brown slightly around the edges.
Give them a minute or two to set once you take them from the oven before attempting to remove them.
