One of my favorite ways to use them is to make this recipe for garbanzo bean cakes, which are protein-packed patties that are crispy on the outside and tender on the inside. They are easy to make with just a few ingredients and spices, and they are perfect for serving as a main course or as a snack. You can enjoy them with vegetables and salad, or turn them into bean burgers with your favorite toppings. In this post, I will show you how to make garbanzo bean cakes with onion, cottage cheese, coriander, basil, oregano, oats and potato flakes. You’re probably thinking how much work would you need to exert to make this dinner or lunch? Good news, readers, is that you just need to open a can, drain it, mash the beans, and assemble the ingredients to mix for the garbanzo bean cakes.

I use a round stainless steel potato masher for mashing, which is really great to own over the square variety. The reason is that I can better maneuver around the mixing bowl than with the other design, which is bulkier.

I like to shape these by hand instead of dropping them into my skillet when I start browning them in warm olive oil. This mixture is not sticky or gooey, but is easy to work with when you start rolling the balls in your palm before patting them down.

You can make a velvety mushroom cream sauce to serve over top for a different meal. A creamy cheese sauce would also work or just a basic white sauce would be good, if desired.

I cook with beans all the time. In fact, I usually use dry beans. However, I keep a few canned beans in my pantry when I forget to soak them or want a quick dinner.

Garbanzo Bean Cakes With Herbs and Cheese

1 can (15.5 oz.) garbanzo beans, drained and mashed
1/4 cup onion, finely chopped
½ cups of cottage cheese
2 large eggs
1/4 cup of quick oats
3/4 teaspoon of coriander
1 teaspoon of basil
1/8 teaspoon of oregano
½ teaspoon of salt
1 teaspoon of baking powder, leveled
1/3 cup of instant potato flakes
6 tablespoons of olive oil (for frying)

Mix together all the ingredients except for the olive oil.

Shape into bean cakes. I made seven from this recipe. However, you can make them larger or smaller.

Pour the olive oil in your frying pan and heat before frying your garbanzo patties.

Cook until golden brown.
