Best Chicken Salad Recipe

3 cups of cooked, chopped chicken
1 can (15-oz.) 3-bean blend (drained)
1 lb. of cooked rotini pasta
3 cups of finely chopped celery
1 medium onion, finely chopped
1 cup of mayonnaise
½ cups of sour cream
3 tablespoons of extra virgin olive oil
2 tablespoons of red wine vinegar
½ teaspoons of turmeric
2 teaspoons of salt
1/4 teaspoon of coriander powder
½ teaspoons of black pepper
6 hard-boiled eggs, sliced into pieces

You can mix all the wet ingredients together first with the spices.

Now stir in the celery, onion, chicken, beans, and eggs and then place in large covered dish to refrigerate for a few hours.

If after refrigerating, this healthy protein-packed chicken salad gets a bit dry, then just add another tablespoon or olive oil to moisten.
