Cinnamon Coffee Bars
1/4 cup of canola oil
1 cup of brown sugar, firmly packed (light or dark)
1 large egg
2 cups of flour
1 teaspoon of baking powder, leveled
1/4 teaspoon of baking soda
1/4 teaspoon of salt
½ teaspoons of cinnamon
½ cups of raisins
Beat the oil, sugar, cinnamon, and egg together first,
In another mixing bowl, sift together the flour, baking powder, baking soda, and salt.
Next, pour the dry ingredients a little a time into the wet ingredients and mix thoroughly until all those ingredients are incorporated.
Blend in the raisins last.
Pour into a well-greased 13 x 9″ baking pan.
Bake in a 350-degree oven for about 15 minutes, depending on how your oven is regulated. Test with a toothpick, cake tester or a slender knife to see if anything sticks determining doneness.
Allow to cool a few minutes, but score the bars while they are still warm.
