There is no creaming butter or shortening like you do for a lot of cake recipes. This cake involves just simply mixing the ingredients together until smooth with your electric mixer. Of course, you also have to sift the dry ingredients together first before combining and alternating the moist with the dry ingredients. Afterwards, it is just pouring the batter into a well-greased sheet cake pan to bake.

You don’t have to frost with a deep chocolate frosting, but it is sinfully decadent with how that extra measure of chocolate seems to compliment each bite of this tender cake. If you prefer a fluffy white frosting, then it is also a winner, only different. Either type of frosting really is wonderful with something special to offer.

Sour Cream Chocolate Cake

3 cups of flour
2 teaspoons of baking soda, leveled
2 teaspoons of vanilla
2 cups of sugar
1 cup of unsweetened cocoa
1 cup of strong coffee, cool
1 cup of thick sour cream
2 large eggs
1 cup of canola oil

Deep Chocolate Frosting

2 cups of confectioners’ sugar
½ cups of unsweetened cocoa
1/4 cup of milk + 1 tablespoon
1 teaspoon of vanilla
1/4 cup of butter, softened

To Make the Cake:

Mix and beat together: the eggs, oil, sugar, vanilla, cool coffee, and sour cream in a large mixing bowl.

In another mixing bowl, sift together the flour, cocoa and baking soda.

Add a little of the moist ingredients to the dry, alternating between the two as you go and mix thoroughly until well combined.

Pour into a well-greased 13 x 9 x 2″ baking pan.

Bake in a 350-degree oven for about 35-40 minutes, depending on how your oven is regulated.

Test with a cake tester, slender knife or toothpick to see if anything sticks determining doneness.

Cool thoroughly before icing.

To Prepare the Deep Chocolate Frosting:

Add all the ingredients and beat with your electric mixture until smooth and creamy. Then spread over the cooled cake.

This cake will take about five minutes to make.  Making frosting takes an additional five minutes or so more, depending if you use my deep chocolate frosting recipe or another.
