However, I do warn you, but these heavenly bars are hard to resist stopping at just one.
Calling All Chocoholics: These Loaded Chocolate Bars are for You!
To begin with, these awesome brown sugar chocolate chip cookie bars have all the variety of textures. These buttery cookies are soft and tender enough to melt in your mouth, but also have that clinging, moist chocolate goodness from melting semi-sweet chips and that cloud of meringue along with some nutty crunch. As a result, I consider theses chocolate chip bars a close cousin to a candy bar with all their delectable sweetness.
Secondly, these homemade chocolate bars make a lot. Of course, you can cut them into larger pieces, but I prefer smaller pieces to help avoid overindulging. To control our sweet tooths, and I place some on a plate in the freezer to harden them up somewhat before wrapping in wax paper and placing in a freezer bag or storage container.
How to Make Chocolate Chip Cookie Bars with Meringue Topping
1 cup of butter, softened
½ cups of brown sugar, firmly packed
½ cups of sugar
3 large egg yolks
1 tablespoon of cold water
2 cups of all-purpose flour
1 tablespoon of vanilla
1/4 teaspoon of salt
1/4 teaspoon of baking soda, leveled
1 cup of chocolate chips
Brown Sugar Meringue Topping:
3 large egg whites
1 cup of brown sugar, firmly packed
1 cup of chopped walnuts or pecans
1/4 teaspoon of salt
- In a large mixing bowl, cream the softened butter and add the one-half cups of brown sugar and white sugar and beat until fluffy.
- Slightly beat the egg yolks first before adding them to the butter-sugar ingredients and creaming thoroughly mixing them.
- Sift the flour with the baking soda and salt and slowly incorporate into the creamed ingredients to well combine them.
- Add the cold water and vanilla next.
- Now spread in a large shallow greased baking pan about 11 ½ “ x 8 ½ “.
- Sprinkle the chocolate chips over the top next.
- Prepare the Meringue:
- Beat the egg whites with the salt until stiff peaks form.
- Gradually add the brown sugar and continue beating until all of it is incorporated into the merginue.
- Spread the meringue over the waiting cookie dough and sprinkle with the chopped nuts.
- Bake in a 350-degree oven for approximately 25 minutes.
- Give these cookie bars a few minutes to cool slightly before scoring them and removing from the pan.
