Besides being so easy to make, these delicious candied fruit cookies are firmer than typical traditional fruitcake cookies you may have tried in the past. These cookies are not cake-like and hold up while providing that sensational chew for maximizing your cookie eating pleasure.
You can bake them early. These Christmas cookies freeze well. I always have a recipe of them in my freezer to take out when needed.
Similar recipes just use baking soda as the leavening agent. The result is tender cookies that spread more. Instead, I use baking powder and less baking soda. The cookies don’t spread that much and have a better texture in my opinion.
Fruitcake Cookies
½ cups of butter, softened
½ cups of sugar
1 large egg
2 teaspoons of vanilla
1 ½ cups of flour
1/4 teaspoon of baking soda, leveled
½ teaspoons of baking powder, leved
1/4 teaspoon of salt
½ cups of Paradise candied red cherries, chopped
½ cups of Paradise candied green cherries, chopped
½ cups of Paradise Old English Fruit and Peel Mix
½ cup of chopped walnuts
½ cups of raisins
- Cream the butter and sugar together until fluffy before add the egg, vanilla and beating through until well mixed with your electric mixer.
- Sift together the flour, salt, baking powder, and baking soda then mix in with the creamed butter-sugar mixture.
- Fold in the fruits and nuts.
- Drop by heaping teaspoons on greased cookie sheet and give them some room to spread.
- Bake in a 350 degree oven for 11-14 minutes.
- Cool in the pan for about three minutes before removing.
