Coconut Smoothie – A Lovely Mess

Ingredients in a Coconut Smoothie

  • Coconut Milk – Or whatever milk you have on hand.
  • Frozen Yogurt – You can also use coconut frozen yogurt as a vegan option.
  • Frozen Banana – Adds nutrients and creates the perfect smoothie texture.
  • Coconut Extract – For maximum coconut flavor.
  • Toasted Coconut Flakes – The ultimate garnish for this smoothie—do not skip.
  • Whipped Cream – An optional garnish.
  • Maraschino Cherry – For garnish.

My favorite blender is my Vitamix blender. My favorite (more affordable) option is this Ninja blender.

Directions

In a blender, add the coconut milk, frozen yogurt, frozen banana and coconut extract. Blend until completely smooth.

To garnish, add the optional topping of some whipped cream, add your toasted coconut flakes and a cherry. Serve in a tall glass with a straw and enjoy!

How to Toast Coconut Flakes

If you have never toasted coconut before, you are in for a treat! Simply add some coconut flakes to a pan at medium heat and watch the edges turn brown and toast. It smells SO good and makes the perfect topping for your smoothie.

Tips for Making

  • If you don’t have coconut extract on hand, you can omit it. Add some coconut flakes to your smoothie for extra coconut flavor and a little texture too!
  • If you don’t want to use frozen yogurt in your smoothie, you can substitute it with Greek yogurt for added protein. I really love Greek yogurt in almost every smoothie recipe!
  • If you don’t have milkshake glasses, they are a great option to add to your glassware collection. Perfect for serving milkshakes, homemade floats and smoothies.
