If your bread doesn’t rise properly, check the yeast’s freshness and the water temperature. Overly warm water can kill the yeast.
For the best dough, gradually add flour until desired consistency forming soft, pliable dough is reached. Humidity can affect flour absorption.

For a convenient option if you don’t want to scald the milk, replace scalded milk with 2/3 cup powdered milk and two cups warm water.

Herb Bread

½ cups of canola oil
½ cups of firmly packed brown sugar
2 cups scalded milk
1 teaspoon of salt
1 teaspoon of caraway seeds
1 teaspoon of sweet basil
½ teaspoons thyme leaves
2 packages or 4 ½ teaspoons of dry yeast
1 cup of warm water (not hot) + 1 teaspoon of sugar
6 ½ to 7 ½ cups of sifted flour

  1. Mix the warm water with a teaspoon of sugar in your mixing bowl. Allow this to proof for about five minutes until the water becomes foamy.
  2. While the yeast is proofing, scald the milk and cool until lukewarm water.
  3. Stir in half the flour, brown sugar, oil, caraway seeds, basil, thyme, salt, and oil next along with the milk. Mix through with your wooden spoon to incorporate.
  4. Add more of the remaining flour gradually to the ingredients until forming soft, pliable dough.
  5. Let the dough rise in a warm spot covered for about one and a half hours.
  6. Punch the dough down.
  7. Let rise about 30 minutes more.
  8. Divide dough into two parts for shaping into two bread loaves.
  9. Place in well-greased bread pans and send to a 350-degree oven for about 35 minutes, depending on how your oven is regulated. Test with a toothpick, slender knife or cake tester to see if anything sticks for determining doneness.
  10. Cool the breads in their pans for about three minutes before attempting to remove and cooling on a wire rack.
