Current Eats: Summer time into Fall


Hello and happy Monday! The next pictures of food that I share will be on my own plates in our new house! I’m losing my mind with the excitement and surreal realization that this house project we’ve been pouring so much thought and energy into building is actually a place we will be living in starting this week. What?! Pinch me.

The only bitter part of this will be leaving mom’s house because having all this extra time together over the past three months has been really special. Not only having mom around to talk and hang out with, but the helping hands makes lighter work and we’ve joked at how we understand the sister wife allure. Somebody already emptied the dishwasher? The coffee is already made? The laundry fairy came? ::Happy sigh::

Mom has also been gracious in letting me come in and run the kitchen like my own. I like meal planning. I like being in charge of dinner (most nights). And I like having help with cleaning up the dishes (thanks again, sister wife mom ;)).

We’ve been living here through the late part of summer into the early part of fall and have enjoyed some really delicious meals that have bridged the seasons. Here are some of my favorites from the last three months that I wanted to wrap up neatly in a blog post here in case you are looking for some simple dinner inspiration, and to wipe the slate clean in my dinner photo album to prepare for the next chapter in the new kitchen. I can’t wait to give you a tour, but until then… here’s some delicious dinner ideas!

…one takeaway from the list will be our obvious obsession with easy green beans. I need to update this easy green bean recipe post, but when I tell you everyone loves these easy green beans, I’m serious. I make them all the time because they always get devoured.

  • Beef soft tacos with refried beans, lettuce, black olives, pico, and jalapenos
  • Pumpkin chicken chili
  • Scrambled eggs with cottage cheese and fresh tomatoes with basil
  • Chicken and steak fajitas with sauteed peppers and onions, lettuce, and guacamole
  • Vegetable barley soup with added beef
