Apple Streusel Muffins
1 ½ cups of sifted all-purpose flour
1/4 cup of sugar
2 teaspoons of baking powder, leveled
½ teaspoons of cinnamon
1 large egg
½ cups of milk
1/4 cup of canola oil
1 cup of peeled, grated apples (about two medium)
Streusel Topping:
1/3 cup of firmly packed brown sugar
2 tablespoons of flour
1 tablespoon of softened butter
1/4 cup of chopped walnuts
- Preheat your oven to 350-degrees.
- Mix the flour, sugar, baking powder, and cinnamon together in your mixing bowl.
- In another small bowl, add the egg, oil, milk and mix through to well combine the wet ingredients next.
- Stir the moist ingredients into the dry ingredients just to moisten them.
- Stir in the grated apples next.
- Prepare the Topping: Combine the streusel ingredients to form thick crumbs for the topping.
- Reserve three tablespoons for the topping.
- Fill your waiting paper-lined or well-greased muffin tins with half of the batter. This makes a dozen muffins.
- Top the partially filled muffins with the remaining topping for streusel filling inside.
