Once again, you won’t be bogged down with a lot of complicated steps or expensive ingredients to rush out and buy just to make these peanut butter apple cookies. You probably have most or all on hand in your pantry and refrigerator already.

Furthermore, I use canola oil to speed up the creaming as well as a healthier alterative to shortening or waiting longer to soften the butter. Oil for this recipe works out just wonderfully and makes the dough easy to handle when you finally roll the dropped teaspoons into small balls and prepare to bake.

Peanut Butter Apple Cookies

Peanut Butter Apple Cookies

1 and 3/4 cups flour
½ teaspoons of baking soda,leveled
½ teaspoons of salt
½ cups of sugar
½ cups of brown sugar (light or dark) firmly packed
½ teaspoons of cinnamon
½ cups of creamy peanut butter
1 large egg
1 teaspoon of vanilla
½ cups of grated apple
½ cups of canola oil

Cream the oil, vanilla, sugars, salt, peanut butter, and cinnamon first before beating in the egg and thoroughly mixing through.

Sift together in another mixing bowl: the flour and baking soda next.

Add a little of the dry ingredients at a time to the creamed mixture and beat with your electric mixer until well combine. Keep adding the dry ingredients and beating until all of those dry ingredients are combined.

Now you can stir in the grated apple.

Drop by teaspoonfuls onto your greased cookie sheets. Roll those teaspoons into small balls before flattening with a fork. (Keep a cup of water to dip the fork in will keep the dough from not sticking in the prongs).

Bake in a 350-degree oven for about 8-10 minutes, depending on how your oven is regulated. The edges will get slightly brown.

Give the cookies about a minute or two to set before attempting to remove them from the pan.

This recipe makes about four dozen.

ENJOY!
