Chickpea Patties
1 can (15.5 oz.) garbanzo beans, drained and mashed
3 tablespoons of finely chopped onion
7 saltine crackers, crushed
1/4 cup of cottage cheese
3 tablespoons of cornmeal
1 teaspoon of baking powder, leveled
½ teaspoons of salt
½ teaspoons of celery seed
1/4 teaspoon of powdered sage
2 large eggs
4 tablespoons of extra virgin olive oil (for frying)
1 teaspoon of lemon juice
Mix together all the ingredients except for the olive oil.
Pour the olive oil in your frying pan and heat before frying your chickpea patties. Drop by the tablespoon into the hot oil.
Shape into four bean cakes from this recipe. However, you can make them smaller.
Turn them over once they start browning slightly at the bottom. If they break apart, no problem. All that you need is to use your spoon or spatula to push them together again to adhere.
Cook until golden brown.
