Fast and Straightforward: White Bean Spinach Patties Recipe for Busy Weeknights


Are you hungry for a delicious and hearty meatless meal? These creamy white bean patties with spinach are packed with flavor and protein. Perfect for a quick and easy dinner, these healthy patties make an easy meal for you and a tasty one for the family. Enjoy them as they are or substitute flax eggs for a vegan option. Since this recipe was a big hit with my family, I had to share it with you along with some helpful tips.

White Bean Patties with Spinach

Ingredients:

1 cup of cooked, navy beans
½ cups of finely chopped onion
½ cups of panko (I used Pereg Sweet Chili Panko)
½ teaspoons of cumin powder
½ teaspoons of mild chili powder
1 cup of cooked, chopped frozen spinach
2 large eggs or flax eggs for a vegan option
2 tablespoons of instant potato flakes
1 teaspoon of baking powder, leveled
3/4 teaspoon of salt
olive oil for frying

Instructions:

  1. Combine Ingredients: In a large bowl, mix together all ingredients except the olive oil for frying.
  2. Heat at least three tablespoons of olive oil in your skillet first.
  3. Drop by heaping tablespoons in the skillet to form four to five white bean spinach patties.
  4. Cook patties until golden brown on both sides, about 5-7 minutes per side. Note: Patties may absorb some oil, so you may need to add more as needed.
  5. ENJOY!

Serving Suggestions:

These white bean burgers go well with a salad, a green vegetable, mashed potatoes, and sliced cucumbers. I served it with mixed vegetables this time, but sliced cucumber with a vinaigrette dressing is much better and a favorite.

Tips for Sensational White Bean Burgers

You can substitute a can (15.5 ounces) of navy beans or your favorite white bean instead of cooking dry beans. I keep some canned beans in my pantry for when I’m short on time, but I normally cook up a small bag or half a bag at a time and pull it out at my convenience. It is also handy to cook extra to store in your refrigerator for creating new recipes such as this one. This is much more economical if you are trying to stretch your food dollars.

I used Pereg Sweet Chili Panko is this recipe, which had a sensational flavor in these healthy patties. Nonetheless, you can also vary the taste and use other flavored panko such as whole wheat panko, spicy panko, Italian panko, gluten-free panko, Japanese panko to plain panko.

Speaking of panko, I always make homemade bread and later dry some to roll out or grab my processor for my own panko. To speed up the drying, you can put rip apart some slices of white bread to add to your food processor using the shredding disc. Afterwards, you lay the coarse crumbs on a baking sheet and send to a 300-degree oven. The trick is you don’t bake them long just about six minutes to dry instead of browning them. This can save your food budget money.

The consistency of these patties is looser and intended to drop by tablespoons into your skillet. Give them some time until the bottoms brown a bit before attempting to turn them. This makes them easier to flip.

If you’re monitoring your sodium intake, you can eliminate the salt from this recipe. I’ve done that and the taste is still delicious. You may find that hard to believe, but a lot of salt-free recipes are too bland for people used to cooking with salt. This one without the salt won’t make someone on a restricted diet feel as deprived.

Beans are an excellent source of healthy nutrition due to their protein, fiber, folate, iron, potassium, and magnesium. Furthermore, legumes have little fat to no fat, trans fat, sodium, and cholesterol.
