Since scones have a way of disappearing at my house, I decided to create another unique scone recipe with these delicious cinnamon scones with cottage cheese, oatmeal and raisins. These tender, little quick breads are wonderful as a breakfast treat, a healthy snack or just a lower-calorie dessert for when the mood strikes. In this post, I’ll share this ideal fall protein scone with you and why you need this delectable recipe.
I don’t know about you but scones are a better choice than most desserts when you crave something sweet like a piece of cake, pie or cookies. The reason is they have less sugar when making a sweet variety and only use canola oil instead of shortening, butter or margarine that often have more bad fats in those choices. My cinnamon scones also do not contain any sodium for another healthier, salt-free recipe. Furthermore, this scone recipe is more nutritious than most scones with cottage cheese protein.
These scones with cottage cheese just basically involve mixing all the ingredients together before shaping and baking. Another plus of making these salt-free scones is how easy they are to whip up. How can you possibly ask for an easier recipe?
Unlike my other scone recipes, these cinnamon scones can be slightly stickier when patting them into a circle. To solve this problem, just drop a little oil on the palm of your hands to lubricate them before you pat the dough down. You can also use a tiny bit of flour and just pat down to incorporate it solves that problem as well.
You’ll love how perfect these are for dunking in your coffee or just nibbling on once you bake a batch. Give them a try and you’ll be glad that you did. Let me know what you think if you bake them in the comments. Also, please feel free to share this recipe with your family and friends.
Cinnamon Scones
2 cups sifted flour
½ cups cottage cheese
1/3 cup sour milk or 1/3 cup milk and teaspoon lemon juice or buttermilk
½ teaspoons baking soda, leveled
2 ½ teaspoons baking powder, leveled
3/4 cup oatmeal
1/3 cup of sugar plus 1 tablespoon
1/3 cup oil
1/3 cup raisins
1-1/4 teaspoons of cinnamon
1 large egg
In a large mixing bowl, add the oats, sifted flour, sugar, and baking powder.
Mix the baking soda with the sour milk or buttermilk.
Now stir in the egg, oil, sour milk or buttermilk, cottage cheese, and cinnamon next and mix into the dry ingredients until well moistened.
Add the raisins next to incorporate.
Pat down the dough to form a somewhat thick circle about eight inches around and two inches high. (If the dough feels slightly sticky, you can use a few drops of oil or a tiny bit of flour on the palm on your hands to pat it down). Then cut in half, then divide each half into thirds before placing a greased baking pan.
Bake in a 400-degree oven for about 12-15 minutes. The bottom will be gently brown.
ENJOY!
