With how hectic our lives can be, this cheesy beef casserole recipe is a simple and easy dish to prepare. Basically, you just will be cleaning and chopping the vegetables before browning the ground beef. After draining it, you’ll add onion and garlic gently brown. Then the rest is just stirring in the other vegetables and seasonings, cooking the macaroni and then combining the drained pasta and cheese to finish cooking through until hot and bubbly.

Cheesy Ground Beef Pasta
1 lb. of ground beef
1 can diced tomatoes (14 ½ oz.)
1 tablespoon of chili powder
1/4 teaspoon of dried oregano
1/4 teaspoon of dried, powdered cumin
1 teaspoon of salt
3 cloves of garlic, finely minced
½ cups of onion, finely chopped
1 medium red pepper, sliced into pieces
1 medium green pepper, sliced into pieces
1 package of mushrooms (8-oz.), sliced
1 teaspoon of sugar
1-1/4 cups of shredded cheddar cheese of Colby cheese
2 cups of elbow macaroni, cooked and drained
3 tablespoons of extra virgin olive oil
In a heavy skillet, brown the ground beef in the olive oil. Cook until the meat is no longer pink (about eight minutes) and then drain off the fat, if needed.
Add the finely chopped onion and garlic and gently brown before stirring in the sliced pieces of red and green peppers to cook until somewhat tender. Next, stir in the sliced mushrooms and continue cooking.
Cook until the mushrooms start shrinking and then stir in the tomatoes, chili powder, oregano, cumin, salt, and sugar. Continue cooking for about 45 minutes.
In the meantime, put on a pot to cook the macaroni until done. Then drain.
Now combine the macaroni into the skillet and add the cheese last to melt through.
