A fabulous addition to your holiday dessert lineup is with these delicious oat apple pie bars with spices dressed perfectly with a crunchy crumb topping. These buttery dessert squares feature a hearty oat and flour crust sweetened with brown sugar married beautifully with a fragrant cooked apple and spicy filling before crowned with the chewy topping.
Unlike many other apple pie bar recipes, my version uses rolled quick oats to the flour, which along with the butter and brown sugar, make these apple squares more nutritious as well as delicious with a wonderful crunch. The spicy cooked apple filling is so reminiscent of freshly baking apple pie that will make your mouth water.
Something else that is great about these filled cookies is the ease of this recipe. The hardest part is peeling and chopping a few apples. Otherwise, it is just gathering five ingredients for the buttery crust base and crumbling them until forming coarse crumbs. Afterwards, it is just cooking the filling and spreading over most of the crumb mixture while reserving one half cup for this wholesome oat crumb topping.

Apple Pie Bars with Oats and Crumb Topping
For the crust:
1 cup of flour
1 cup of quick oats
2/3 cup of packed brown sugar (light or dark)
1/4 teaspoon of baking soda, leveled
1 stick or ½ cups of butter
For the filling:
3 medium apples, peeled and chopped into small pieces
2 tablespoons of sugar
2 tablespoons of water
1 tablespoon of lemon juice
½ teaspoons of cinnamon
1/4 teaspoon of ground cloves
To Prepare the Crust:
Sift together the flour and baking soda into a large mixing bowl.
Stir in the oats and brown sugar to the flour mixture before adding the butter and rubbing it together until forming coarse crumbs.
Set one-half cup of the crumbled mixture aside for the topping.
Press into a well-greased pan approximately 9x9x2 or 8×10-inches.
To Prepare the Apple Filling:
In a medium saucepan, add the chopped apples, water, sugar, lemon juice, cinnamon, and cloves. Bring this mixture to a boil and then reduce the heat and continue cooking until the apples are tender. This will take about eight minutes, depending on how thick or thin that you slice the apples.
Now spread the apple filling over the waiting crust in the baking pan.
Top with the remaining crumb mixture.
Bake in a 350-degree oven for about 25 to 30 minutes, depending on how your oven is regulated.
When baked, the top should be golden brown. Test with a toothpick, cake tester or slender knife to see if anything sticks determining done.
