Peanut butter is an important staple in our house. My family seems to go through it like water with the number of jars I buy. Because we love its nutty goodness so much, I have a tasty quick bread recipe for my easy peanut butter bread as yet another way to enjoy it.
This cake-like bread has that satisfying, but subtle peanut flavor coming through without being overly sweet. The brown sugar along with vanilla adds a delicious element that is more robust than using regular sugar.
Though you can use a standard size bread loaf pan, I prefer to use two small bread loaf pans. The reason for this is because I can store one in the freezer for later. Otherwise, if I make the regular size, this yummy bread disappears too quickly.
I hope that you will give my easy peanut butter quick bread a try because it is excellent for snacking or a dessert. Also, it will stay moist.

Easy Peanut Butter Quick Bread
1 large egg
1 cup of sour milk, buttermilk or milk soured with 1 tablespoon of lemon juice
1 cup of brown sugar, firmly packed (light or dark)
½ teaspoons of baking soda, leveled
1 teaspoon of baking powder, leveled
2 cups of flour
2 tablespoons of canola oil or melted butter
1 teaspoon of vanilla extract
½ teaspoons of salt
Cream the sugar and egg with your electric mixer thoroughly in a large mixing bowl.
In another mixing bowl sift together: the flour, baking soda, baking powder, and salt.
Add a little of the dry ingredients to the creamed ingredients while alternating with the sour milk and beating to incorporate. Keep doing this until all the ingredients are combined and finishing with the sour milk.
Pour into two small bread loaf pans (about 7-1/8 x 3-7/8 inches) or one regular standard size loaf pan ( 8 ½ inches x 4 ½ inches).
Bake at 350-degrees for 50-60 minutes for the standard size pan and about 25 minutes for two small bread loaf pans. This time depends on how your oven is regulated. Test with a cake tester, toothpick or slender knife to see if anything sticks.
Allow to cool in the pan for about five minutes before attempting to remove.
