Lemon Scones with a Scrumptious Twist, Raisins, and Orange Peel


These lemon scones are light and fluffy with an unbelievable unique flavor from vanilla, cinnamon, raisins, and diced orange peel added to the recipe. They’re easy to make besides being healthy additions for your breakfast table, snacking or a simple dessert.

What makes this fruit scone different is that the lemon flavor is subtle and yet distinct enough to come through these tender treats. Instead, the vanilla, cinnamon, raisins and diced orange peel contribute something extra that magically seems to play off that lemon flavor in a wonderful way.

Furthermore, this is a healthy scone recipe without artery-clogging butter or shortening. These lemony scones use the best vegetable oil with canola oil. It also does not contain salt. It is unnecessary for improving the taste while being better for keeping sodium levels down. In addition, there is less sugar in these simple scones compared to other tempting baked goods.

Something else that I want to add is that you don’t need a glaze with these scones. They are perfect the way that they are. However, you always have that option to make a lemon, orange, or vanilla glaze to concentrate on one of those flavors.

You also will like the ease of baking these scones. No mixer is required. In fact, you just assemble the ingredients and gently mix enough to moisten the ingredients. Then you shape the dough into small balls, grease your baking pan and send to the oven.

Ingredients for These Fruit Scones

flour
sugar
lemon extract
vanilla
cinnamon
raisins
diced orange peel
baking powder
water
egg
canola oil

Fluffy Lemon Scones with Raisins and Orange Peel

2 cups of sifted flour
1/3 cup of sugar
1 teaspoon of lemon extract
1 teaspoon of vanilla
1/4 teaspoon of cinnamon
1/3 cup of raisins
1/3 cup of diced orange peel
2-1/4 teaspoons of baking powder, leveled
1/3 cup of water
1 large egg
1/3 cup of canola oil

  1. Sift together the flour, sugar and baking powder in a large mixing bowl.
  2. Gently combine the egg, water and oil and pour into the mixing bowl with the dry ingredients.
  3. Stir with your wooden spoon until all the dry ingredients are moistened.
  4. Add the cinnamon, raisins and diced orange peel next and mix through to combine.
  5. Roll into small balls and deposit on a well-greased baking pan.
  6. Bake in a 375-degree oven for about 10-12 minutes, depending on how your oven is regulated and the size of the scones that you shaped.
  7. Test with a cake tester, toothpick or slender knife to see if anything sticks for determining doneness. The bottoms will be slightly brown.
