Orange and Molasses Hen Stir Fry: A Fast and Wholesome Dinner Recipe


This delicious chicken stir fry recipe has orange juice, molasses, peanuts, ginger, and lots of vegetables in a slightly sweetened sauce served over a bed of rice. It is a wonderful and economical main dish that can help clean out your refrigerator while helping the family eat more vegetables.

If you’re looking for a quick and healthy dinner, you can’t go wrong with this stir fry recipe. It is packed with extra protein from chicken breast and peanuts that also lend a fantastic crunch. Furthermore, it has lots of vegetables that are rich in nutrients and fiber.

I only use healthier organic chicken that is antibiotic and hormone free, which reduces the risk of developing salmonella since they are allowed to roam. On the other hand, ordinary nonorganic chicken is confined to small spaces while being fed hormones and antibiotics that make them susceptible to passing on salmonella to us.

Orange and Molasses Chicken: A Healthy Stir Fry Recipe

1 large chicken breast, cut into small pieces
1 green pepper, chopped in small pieces
1 medium onion, diced
1 cup of orange juice
1/4 cup of water
1/4 cup of milk
3 tablespoons of cornstarch
2 tablespoons of molasses
1/4 teaspoon of ground ginger
½ teaspoons of red pepper flakes
2 carrots, sliced into small pieces
6 cloves of garlic, finely chopped
1/4 cup of olive oil
1 teaspoon of salt
1/3 cup of peanuts
1 bag of frozen broccoli (12 oz.)
1 cup of raw rice + 2 cups of water

  1. Cook the rice in two cups of water, cover and bring to a boil, then lower the heat and cook for 20 minutes until rice is tender and the water is absorbed.
  2. Brown the onion and garlic in the olive oil until golden brown, then add the chicken and continue cooking to brown.
  3. Next, add the chopped vegetables to the frying pan with the chicken, onions and garlic and continue cooking.
  4. Make the sauce by stirring in the cold water with cornstarch, orange juice and milk and pour over the simmering vegetables and chicken.
  5. Add the molasses, salt, and peanuts to the mixture.
  6. Cook until the sauce thickens somewhat before serving over a bed of the cooked rice.
  7. ENJOY!
