These chocolate apple spice muffins are the perfect combination of sweet and comforting, making them an ideal treat for any time of day. Why These Homemade Muffins Are Worth Your Time

Their flavor is unique. There is not one dominant flavor to allow the cocoa, apples, raisins or spice to overpower another. What is different is how those ingredients merge and compliment each other perfectly.

These breakfast muffins also are so easy to make. The most work is peeling and cutting the apples. All you have left to do is assemble the ingredients, precook the apples and plump up the raisins, beating the egg whites until stiff, and then mixing the batter and loading muffin tins.

This recipe for apple and chocolate muffins is also versatile. If you don’t want to include the spices, you can substitute a teaspoon of vanilla or almond extract for a wonderful change of taste.

These moist chocolate muffins also are fairly inexpensive to bake with ingredients you probably have on hand anyway.

How to Make Chocolate Apple Spice Muffins

2 medium apples, peeled, pared and diced into small pieces
1/4 cup of water
1 1/4 cups sifted all-purpose flour
2 tablespoons unsweetened cocoa
½ cups of sugar
½ teaspoons of baking powder, leveled
1 teaspoon of baking soda, leveled
½ teaspoons of salt
½ teaspoons of ground cinnamon
1/4 teaspoon of ground allspice
2 large eggs, separated
1/4 cup of raisins + 1/4 cup of water
1/3 cup of canola oil

  1. Combine the diced apples and one-fourth cup of the water in a small saucepan. Simmer, covered until tender for about five minutes. Then cool.
  2. Sift together: flour, cocoa, sugar, baking powder, baking soda, salt, cinnamon, and allspice in a large mixing bowl.
  3. Add the cooked apples, egg yolks and oil next and mix through until well blended.
  4. Place raisins in the saucepan and add that reserved one-four cup of water to plump them up. Do not drain.
  5. While the raisins are cooling, beat the egg whites with a sprinkle of salt or two from your salt shaker (about an additional one-eighth teaspoon) until high peaks form. You want the egg whites stiff, but not dry.
  6. Fold the beaten egg whites into the batter and fill your waiting paper-lined or well-greased muffin tins with the batter. This makes a dozen muffins.
  7. Bake in a 350-degree oven for about 18-20 minutes, depending on how your oven is regulated. Test with cake tester, toothpick or slender knife to see if anything sticks for determining doneness.
