I was going through more of my other grandmother’s recipes when I found a folded slip of paper buried at the bottom of her recipe box. When I pulled it out, I found a recipe for this nut bread. I forgot about it because she later made nut rolls more often with yeast, filled with chopped walnuts inside after my grandfather got false teeth. This is a harder quick bread without oil, shortening or butter that made the chew more difficult for him. For this reason, my grandmother didn’t like to make it knowing how much my grandfather did like a slice or two, being one of his favorite breakfast breads. This one is made with baking powder and as a quick bread. However, this nut bread recipe is easy, delicious and chalked full of crunchy walnuts with a soft, sweet inside, surrounded with a biscotti like exterior.

To begin with, I can’t think of a simpler recipe than this easy one. It can be thrown together in about five minutes before sending it to the oven to bake.

Secondly, this is a healthy nut bread recipe without the need for any form of grease from shortening, butter or oil. Besides that, this is bread is free of salt for those watching their sodium intake. You can even reduce the sugar by one-fourth cup without altering the taste dramatically if are watching your sugar intake.

Thirdly, you probably have most of the few ingredients now. The ingredients are common staples in most kitchens except you may need to buy the walnuts.

Fourthly, this old-fashioned nut bread is economical and won’t cost you a fortune to make. The most expensive ingredients are the nuts, which go on sale especially now and toward the holidays.

A fifth reason is you bake this bread ahead, slice it and freeze it. Later, take out what you need.

Still, you’ll love this recipe because it is a satisfying, filling bread that is substantial and more nutritious from all the walnuts and their protein. You can’t say that about all quick sweet breads.

Finally, you can add more crunch to this harder bread and toast it. It also is delicious, spread with melted butter.

Easy Nut Bread

1 cup of sugar
1 large egg
1 ½ cups of milk
4 cups of sifted flour
4 teaspoons of baking powder, leveled
1 cup of chopped walnuts

  1. Mix all the ingredients together and stir with your wooden spoon, fork or whisk until moistened and incorporated together.
  2. Pour into two regular bread loaf pans that are well-greased.
  3. Let the loaded breads set for forty minutes.
  4. After the forty minutes, bake in a 350-degree oven for 40 to 50 minutes, depending on how your oven is regulated. Test with a cake tester, toothpick or slender knife to see if anything sticks.
  5. Allow the breads to cool in the pans for about five minutes before removing and transferring to a wire cooling rack.
