1/3 cup of canola oil
1/4 cup of milk
1-1/4 cup of cottage cheese
1 large egg
3/4 cup of sugar
3 teaspoons of baking powder, leveled
1 tablespoon of vanilla
- Preheat the oven to 400-degrees.
- In a large mixing bowl, add the sifted flour, oil, milk, cottage cheese, egg, sugar, baking powder, and vanilla and mix until all the ingredients are just moistened to incorporate. I use a fork or the wooden spoon.
- Grease two baking pans because this recipe makes a lot.
- Take about a heaping tablespoon of dough at a time to roll in the palm of your hand to form a small ball. (If the dough feels a bit sticky, add a little flour to your hands to continue shaping).
- Place the shaped scones on the cookie sheets and bake at 400-degrees to twelve to fifteen minutes.
- Give about two minutes to cool in the pan before removing.
