We don’t like our sauces too sweet, thus making this sauce homemade is a dream! It’s so easy to cook and even easier to eat on so many things. We truly believe that once you make it homemade, you won’t buy the store bought bottle again.

Customize sweetness of teriyaki from scratch

You can adjust homemade teriyaki sauce to your personal taste. We start with a base amount of brown sugar. But it’s not overly sweet like other commercial bottled versions. Once you taste the sauce, you can then add a little more sugar or vinegar to your personal taste. Love more tang? The vinegar will make it perfect. Like it a little less sweet? then make your next batch less sweet and mix it with your current batch. Want it a little thicker, simmer for a few more minutes. You do you.

Homemade Teriyaki Sauce

In 10 minutes, you can make a batch and have ready for whenever you want a delicious sauce. Adjust the sweetness to your preference by adding or reducing the brown sugar. Make it thicker or thinner by adjusting the cooking time. You do you. Makes about 1 1/4 cups of sauce.
  • 1/2 cup (120 ml) soy sauce
  • 1/2 cup (120 ml) sake or water
  • 1/2 cup (110 g) brown sugar
  • 2 Tablespoons (30 ml) rice vinegar (or distilled white vinegar or apple cider vinegar)
  • 2 teaspoons (10 ml) cornstarch
  • 2 teaspoons (10 ml) optional grated fresh ginger , or 1/2 teaspoon ground ginger
  • In a saucepan combine all the ingredients (soy sauce, sake or water, brown sugar, rice vinegar, corn starch, and optional ginger).

  • Heat over medium-high heat, stirring or whisking to dissolve the brown sugar, and bring the teriyaki sauce to a simmer. Simmer for 1-2 minutes or until the sauce thickens.

  • Sauce should have the thickness to coat a spoon (it will thicken a little more as it cools) or continue simmer and thicken to your liking. For a thicker, more glaze like sauce, continue to simmer, stirring frequently, until it reaches your desired thickness. Set aside to cool and store in the fridge. Keeps for weeks if stored properly in the fridge.

If your air fryer is preheated or if you are cooking multiple batches, you may need to reduce timing by a few minutes (unless preheating is called for in the recipe).

It’s best to store the homemade sauce in airtight containers or jars. You can store the sauce in the fridge for about 2-3 weeks. Try to use it sooner than later because there’s no preservatives in it and the flavors start to get a bit dull after a while. It is still better than most any store bought ones though. Also, have you ever tried to make a spicy version? We did and it tasted great! Just add a few teaspoons of hot sauce in the teriyaki and taste. Adjust the spice level to your personal preference.
