Simple Weeknight Floor Beef, Cornbread and Cheddar Casserole Recipe

Combining savory ground beef, crispy cornbread layered in and gooey cheddar cheese, this classic easy main dish recipe gets a flavorful boost from diced jalapenos and caramelized onions. Ground Beef Cornbread Casserole

1 lb. of ground beef
2 large eggs
1 can cream corn (14.75 oz) or 1 can whole kernel corn (15 oz.) + 2 tablespoons of sugar
1 cup of milk
1 cup of yellow cornmeal
3 tablespoons of flour
1 ½ teaspoons of baking powder, leveled
½ cup of canola oil
½ teaspoons of salt
4 cups of grated Cheddar cheese, divided
1 medium onion, finely chopped
4 jalapeno peppers, seeded and chopped
3 tablespoons of olive oil

  1. In a large skillet, brown the ground beef in the oil until no longer pink.
  2. Drain the ground beef if necessary before adding the chopped onion and jalapenos to cook until gently browned to caramelize them.
  3. Prepare the Cornbread Batter: In a mixing bowl, beat the eggs, milk, corn, mix and oil first before adding the cornmeal, flour, canola oil, and salt to mix through and incorporate.
  4. Pour half of the batter into a greased baking pan about 13-in.x 9-in. x 2-in.
  5. Lay down two cups of the cheese next.
  6. Top with the beef, fried onions and jalapenos.
  7. Sprinkle the remaining Cheddar cheese over this meat layer.
  8. Top with the remaining cornbread batter.
  9. Bake in a 350-degree oven for about 50 minutes, uncovered. Test with a toothpick, cake tester or slender knife to see if anything sticks for determining doneness.
  10. Cut into squares to serve.

Tips and Tricks to Take Your Cheesy Beef Casserole to the Next Level

This hearty casserole is perfect for meal prep! Reheat individual portions in the microwave for a quick and satisfying lunch.

Customize the heat level: Adjust the number of jalapenos and whether or not to include the seeds. Two jalapenos with seeds can be quite spicy. Be cautious when handling jalapenos, as the oils can irritate your skin. Use a fork to remove seeds to protect your hands.

Kid friendly recipe: Kids love this cheesy casserole! Serve it with a side of your child’s favorite vegetable and fruit.

Reuse oil: After measuring the canola oil, tilt the measuring cup upside down in the baking pan to coat the bottom with the remaining oil. This saves precious cooking prep time that helps.
