Macaroni oozing with plenty of melted Cheddar cheese is an easy and favorite comfort meal. This recipe adds diced tomatoes and olive oil to the mix, which lends a delicious and healthier element to this stovetop macaroni and cheese.

Why This Recipe for Simple Mac and Cheese with Tomatoes is Different

For starters, this tasty dish replaces butter or margarine with heart-healthy olive oil for better fats, being rich in monsaturated fat that is good for lowering cholesterol and less of saturated fats that can increase it for making the creamy white sauce with cheese.

If you’re watching your sodium level, then you also have the option of eliminating the salt in this recipe.

Secondly, this is fast and a timesaving dinner that you can put together in a short amount of time. You make this recipe on the stovetop and not the oven.

You can experiment with a teaspoon or two of prepared mustard or Dijon mustard for another flavorful twist. The prepared mustard gives it a sweeter taste than the Dijon mustard in my opinion.

Another suggestion is adding a teaspoon of Worcestershire sauce to the mix.

If you like more cheese, you always can increase the amount. On the same note, this also goes for the size of the can of diced tomatoes that you use by substituting a bigger 28-ounce can.

Delicious Stovetop Macaroni and Cheese with Tomatoes

8-ounces of dry elbow macaroni
1/4 cup olive oil
1/4 cup flour
½ teaspoons of salt
1/4 teaspoon of black pepper
1 cup of milk
1 (14.5-ounce) can of diced tomatoes
8 ounces shredded Cheddar cheese
dash of paprika

  1. Cook the macaroni.
  2. Mix together with a whisk the milk, flour, olive oil, pepper, tomatoes, and salt until smooth before pouring into a heavy saucepan.
  3. Cook the milk mixture until thickened.
  4. Sprinkle in the cheese and continue cooking until melted.
  5. Drain macaroni and stir into the cheese sauce.
  6. Sprinkle with a dash of paprika.
