Ingredients:
For the Cornbread
1 cup of yellow cornmeal
1 cup of flour
4 teaspoons of baking powder, leveled
1/4 teaspoon of salt
1 large egg
4 tablespoons of sugar
1/3 cup of canola oil
1 cup of milk
For the Creamed Chicken Sauce
1 cup of shredded Cheddar cheese (sharp)
1 tablespoon of extra virgin olive oil
2 tablespoons of minced onion
2 tablespoons of butter
2 tablespoons of flour
1 teaspoon of prepared mustard (not dry)
3/4 teaspoon of Worcestershire sauce
1/4 teaspoon of salt
1 cup of leftover chicken, chopped into small pieces
Instructions:
To Prepare the Cornbread
- Preheat the oven to 350-degrees.
- Mix dry ingredients of the corn meal, flour, baking powder, salt, and sugar then combine with wet ingredients of milk, oil and the egg in a large mixing bowl.
- Beat with your electric mixer for about a minute until well combined and fairly smooth.
4.Pour the batter into a greased baking dish (7 x 11″-inch) and bake at 350-degrees for about 22-25 minutes until golden brown, depending on how your oven is regulated. Test with a toothpick, cake tester or slender knife to see if anything sticks for determining doneness. - Cut into serving squares and top with the cheesy creamed chicken sauce.

- Briefly remove the skillet from the heat and stir in the flour to coat.
- Return to the heat and cook out the rawness of the flour for about one minute.
- Now add the milk, chicken, mustard, Worcestershire sauce, salt, and shredded Cheddar cheese mix and cook until thickened and well heated through.
- Pour over the cut cornbread.
