Straightforward Espresso Scones with Almond and Raisins: A Wholesome and Scrumptious Breakfast Deal with


Scones are always on the menu at my house, which if you follow me probably have noticed by now. This morning I created delicious coffee inspired scones offering something unique to bring to your breakfast table or to snack on as a healthy, low sugar and salt-free treat. This easy scone recipe also has almond extract, two tablespoons of molasses to a reduced amount of sugar along with raisins that play off the coffee so both the coffee and almond flavors shine through. Let me share this recipe with you and why you want to make it.

The Advantages of Making These Scones

  • For those dieting, you have the option of reducing the sugar. You can use one-third cup of sugar for a slightly sweeter scone or go with one-fourth cup of sugar that will rely getting more sweetness from the raisins and the molasses.
  • If you’re watching your sodium levels, these tender oatmeal scones have no salt. You will not miss it!
  • These healthy scones use a healthier vegetable oil with canola oil instead of one with more saturated fats.
  • It has plenty of nutritious protein and fiber from oats along with the egg used as the binding agent.
  • These tender breakfast scones also are more filling than others made with just flour.
  • There is hardly any work involved making these. You just combine all the ingredients, pat down and cut or roll into small balls in the palm of your hand to deposit onto your greased baking sheet and then send to the oven.

Coffee Scones

1- 3/4 cup of quick oats
1- 1/4 cup of sifted flour
1/4 to 1/3 cup of sugar
2 tablespoons of molasses
1/3 cup of strong coffee or 2 teaspoons of instant coffee into a 1/3 cup hot water
1/3 cup canola oil
1 large egg
2 ½ teaspoons of baking powder
½ cup raisins
1 teaspoon of almond extract

In a large mixing bowl, add the oats, sifted flour, sugar, and baking powder.

Now stir in the egg, oil, coffee, almond extract, and molasses and mix into the dry ingredients until well moistened.

Add the raisins next to incorporate.

Pat down the dough to form a somewhat thick circle about eight inches around and two inches high. Then cut in half, then divide each half into thirds before placing a greased baking pan.

Bake in a 400-degree oven for about 10-12 minutes. The bottom will be gently brown.
