I hate washing a lot of extra measuring cups. Therefore, I measure out the canola oil first then turn the emptied measuring cup over my cake pan to drip out the last drops for greasing the pan. After I grease the pan, I reuse it for measuring the rest of the liquids.
If you use orange rind inside the batter, then you’ll need two oranges to grate. One orange will be for the topping and the other for the batter. However, grating one orange for the rind and using the orange extract for the batter is the best way to save time.
Line up all the ingredients beforehand also will rush this recipe along instead of hunting for them later.

How to Make Easy Orange Molasses Snack Cake
1-3/4 cups of sifted flour
1 teaspoon of baking powder, leveled
½ teaspoons of baking soda, leveled
½ cups of sugar
½ cups of molasses (dark, light or blackstrap)
½ cups of milk
1/3 cup of canola oil
2 large eggs
1 teaspoon of orange extract or 1 tablespoon grated orange rind
1 teaspoon of vanilla
Cake Topping:
grated rind of 1 orange (about 2 tablespoons)
1/3 cup of sugar
- Sift together the flour, baking powder and baking soda in your mixing bowl.
- Add the oil, sugar, milk, molasses, eggs, and orange extract or one tablespoon of the orange rind, and vanilla.
- Mix all the cake ingredients thoroughly with your electric mixer before pouring into a 13x9x 2-inch well-greased baking pan.
To Prepare the Cake Topping:
- Mix the topping ingredients together and sprinkle over the top of the unbaked cake.
- Bake in a 350-degree oven for about 30-35 minutes, depending on how your oven is regulated. Test with a cake tester, slender knife or a toothpick to see if anything sticks for determining doneness.
- Serve warm or cool by cutting into squares.
