Gina has raved about this recipe on her blog for years and when I finally took the time to make it, I instantly understood why! It’s fluffy and cheesy and wonderful topped with fresh pico de gallo and avocado.

Packed with carrots, apple, pineapple, coconut, raisins and walnuts these Best Ever Morning Glory Muffins earn every last bite of their delicious name. These are a bit more labor-intensive to make, but are 100% worth the extra effort. (You can absolutely make them in advance, too!) This recipe makes the whole house smell amazing! It’s a great alternative to traditional French toast I love to make when we have guests in town because it doesn’t require you to stand over the stove and flip a million pieces of French toast. We love this recipe topped with fresh berries… and, okay, sometimes whipped cream, too!
