Strawberry Boba – A Stunning Mess


Strawberry boba, or strawberry bubble tea, is a fruity milk tea drink made with popping (or bursting) boba pearls. While many bubble teas are made with traditional tapioca pearls, which are solid and chewy, these strawberry boba are more like sweet liquid encapsulated in a thin, edible bubble wrap. They are so fun and sweet!

While I usually prepare my own (tapioca) boba at home, I will simply buy the bursting boba pearls to use in a recipe like this. Once opened, you can store in your refrigerator for some time and add to all sorts of drinks.

Brew the strawberry tea and allow to cool. Then combine the strawberry tea, milk and simple syrup.

In a glass, add the strawberry boba and ice. Add a few slices of fresh strawberries. Then pour in the strawberry milk tea.

Taste and add more sweetener if you feel it needs it.

Tips for Making

  • You will want to serve this with a boba straw, as a standard size straw will not be big enough for the boba pearls to pass through.
  • Strawberry tea will come in a variety of different options, including herbal, black or green. Some of these contain caffeine and some do not. If you are looking to avoid caffeine, look for an herbal option.
  • You can use dairy milk or any milk alternative you prefer, like soy or oat milk.
