Cheesy Hot Dog Casserole
2 cups of uncooked rotini pasta
5 hot dogs
½ cups finely chopped onion
3 tablespoons of extra virgin olive oil
3 tablespoons of flour
1 teaspoon of Worcestershire sauce
½ teaspoons of prepared mustard
½ teaspoons of salt
1 cup of milk
1 ½ cups of cream-style cottage cheese (12 oz.container)
Cook the rotini and then drain.
At the same time, start browning the chopped onion in the olive oil until golden brown.
Momentarily take the pan with the onions off of the heat and stir in the flour and mix thoroughly to coat the onions.
Now return the pan to the heat to cook the rawness of the flour out. This will take about a minute.
Then stir in the Worcestershire sauce, mustard, salt, and milk and cook until somewhat thickened.
Stir in the chopped slices of hot dogs, cooked pasta and the cottage cheese and mix well to incorporate all the ingredients.
Turn into a two-quart size casserole or a 10-skillet and cover.
Bake in a 350-degree oven for about 30-35 minutes, depending on how your oven is regulated until this casserole is hot and bubbly.
