This peanut butter streusel pie recipe is the best marriage of a velvety peanutty custard followed by a layer of peanut streusel topped with a high cloud of delectable meringue in my flaky oil pie crust. Trust me on this, but one bite of this peanut streusel pie and you’ll be hooked. In this post, I’ll share this luscious peanut pie with you along with some helpful tips so it turns out perfectly for you.
Although you can use your favorite pie crust recipe or a prepared crust, I always make my oil pie crust recipe. It may not look as beautiful as some others with shortening, but it is foolproof and a healthier option with olive oil or canola oil instead of artery clogging shortening with all its bad fats. Honestly, readers, this is my only recipe I use these days for pies, quiche, pot pie, and tarts.
This peanut butter streusel pie recipe is fairly easy. You just have to make a pie shell or open a box before baking the crust first. Remember to use a fork to stab the unbaked crust to prevent it shrinking in spots. Next, it is just making this luscious custard and whipping up the meringue.

Peanut Butter Streusel Pie
For the Peanut Streusel Pie Filling:
1/3 cup of peanut butter (creamy or crunchy)
3/4 cup of sifted confectioners’ sugar
1/3 cup of flour
2 cups of milk
3 large egg yolks
2 tablespoons of butter
½ tablespoon of vanilla
baked 10″ pie shell (one recipe of my oil pie crust)
For the Peanut Streusel Pie Meringue:
3 large egg whites
1/4 teaspoon of cream of tartar
½ cups of sugar
1 teaspoon of cornstarch
1 teaspoon of vanilla
To Make the Peanut Butter Pie Filling:
- Prepare and bake the pie shell.
- Blend the peanut butter with the confectioners’ sugar until a crumbly texture.
- Sprinkle 2/3 of the peanut butter-sugar mixture over the baked pie shell.
- Combine flour, milk, egg yolks, and the remaining 1/3 cup of the peanut butter-sugar mixture.
- Use your whisk to beat as smooth as possible before cooking over medium heat, stirring constantly until thickened.
- Add the butter and cook a few minutes longer.
- Remove from the heat and stir in the vanilla.
- Prepare the meringue next.
To Make the Peanut Butter Pie Meringue:
- Beat the egg whites until stiff and glossy.
- Beat in the cream of tartar, sugar, vanilla, and cornstarch gradually.
- Pile on the filled pie and send to a 400-degree oven for about 7 or 8 minutes to slightly brown the meringue.
- Chill before serving.
