This Straightforward Banana Fritters Recipe Is Wealthy in Protein

We’re always on the lookout for easy, nutrient-rich breakfast recipes that pack a punch of deliciously cozy flavor, and we’ve struck gold with this find from Kiley O’Donnell of @wellmadebykiley. The Virginia-based recipe developer is an excellent resource for finding tantalizing takes on our favorite comfort foods, from donut holes to pizza rolls, but we’re especially excited about her air-fryer banana fritters recipe that come together in less than 30 minutes.

This banana fritters recipe uses basic pantry staples, plus greek yogurt and Oat Haus’s Original Granola Butter (heads up: you’ll want to eat the whole jar before whipping up a batch) to create a satisfying treat that has the perfect balance of sugar and spice. Plus, it offers a big gut health boost thanks to the probiotic-rich yogurt (make sure your favorite brand has plenty) and the soluble fiber found in ripe bananas, which can help get things moving first things in the morning.

O’Donnell mentions in the comments that you’re welcome to use other fruit you have on hand, like fresh berries, if you don’t like bananas or don’t have any at home—and you bet berries will help support a healthy, happy gut, too. Plus, she notes that plant-based eaters can use a non-dairy yogurt or applesauce to make a vegan version of this recipe that will still be plenty delicious.

Keep in mind: While these are an affordable, wholesome alternative to our morning pastry and latte runs, your energy levels will thank you when you add some protein, fiber, and healthy fat to make this a more well-balanced meal. Try serving these delicious fritters with an extra serving of Greek yogurt or skyr and homemade chia jam, or whip up a side of scrambled eggs with turkey bacon or sausage to keep you powered through the morning. You can also dip or coat your banana fritters with a generous shmear of almond butter or peanut butter to pack even more protein, antioxidants, and healthy fats into your morning meal.

One more word to the wise? The dough may get pretty sticky as you try to form your fritters and roll them in the cinnamon-sugar coating. You may want to coat your hands in cooking spray or flour, and you can also use spoons to help your dough take shape.

Kiley O’Donnell’s Air-Fryer Banana Fritters Recipe

Ingredients
For the fritters:
1 cup all-purpose flour
1 cup greek yogurt
1 1/4 tsp baking soda
1 tsp vanilla extract
1/2 tsp cinnamon
2 large bananas, sliced into coins

For the cinnamon-sugar coating:
1/4 cup coconut or granulated sugar
3 tsp ground cinnamon

For the granola butter glaze:
1/4 cup Oat Haus Original Granola Butter
2 Tbsp powdered sugar
1-2 Tbsp almond milk (or milk of choice)

Instructions
1. Preheat the air fryer to 375 °F.

2. In a medium bowl, combine the flour, greek yogurt, baking soda, vanilla extract, and cinnamon. Mix until a sticky dough forms, then add the sliced bananas and mix until they are evenly distributed throughout the dough (it’s okay if the bananas get slightly mashed in).

3. In a separate bowl, mix together the coconut sugar and cinnamon.

4. Once your air fryer is preheated, spray the basket with non-stick cooking spray or place a piece of parchment paper on the bottom.

5. Using a large spoon, scoop out two tablespoons of dough and place directly into the cinnamon sugar mixture. Using your hand or the spoon, roll the ball of dough around, making sure it is completely covered. Repeat until dough is used up.

6. Once coated, place dough balls directly into the air fryer basket in batches until the dough is gone. Air fry for six to eight minutes.

7. While the fritters are air frying, mix together the ingredients for the granola butter glaze. Remove fritters from the air fryer and drizzle the glaze on top before serving.
